No Roll Quick Pie Crust

This is a quick version of the traditional pie crust. It is not as flaky and good looking but it is good enough and if the shortcut makes it easier to cook dinner when you are tired or in a rush, it deserves a place in your recipe book.

I got this recipe from a French group of moms that loved cooking and 2 other versions, very similar, from 2 other French moms, in a different context, that also love cooking. All that to say that this recipe is not something esoteric but a common shortcut.

Ingredients

  • 250gr of flour
  • 125gr of butter
  • 4 tbsp of water
  • A pinch of salt
  • 1 tsp of baking powder
  • 1.5 tbsp of sugar (if making a sweet pie)

Method

Put the water, salt (sugar if using)and butter in a pan and melt on low fire.

Take out of the fire, add the flour and yeast to the pan, mix with a wooden spoon or a spatula.

Put the dough in the mould and spread with your hands and/or a spoon. Be careful the dough is not too hot.

Cook it as a regular dough. I cover it with foil, fill with garbanzo beans and blind bake at 375F for 10-15 minutes.
